Grilled Italian Sausage Skewers with Rosemary & Balsamic Glaze Recipe

Juicy Italian sausages grilled alongside fresh veggies and brushed with rosemary-infused balsamic for that rustic, smoky, sweet-savoury finish. Perfect for casual BBQs or long weekend grazing.



 Ingredients (Serves 4–6):


  • 4–6 mild or spicy Italian sausages (cut into chunks or kept whole if preferred)

  • 2 red peppers, chopped

  • 1 zucchini, sliced

  • 1 red onion, cut into wedges

  • A few sprigs of fresh rosemary

  • 3 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tsp honey (optional, for sweetness)

  • Salt + black pepper

  • Wooden or metal skewers


Instructions


  1. Prep the Glaze: In a small bowl, mix olive oil, balsamic vinegar, a pinch of salt, cracked pepper, finely chopped rosemary, and honey (if using). Set aside.

  2. Build Your Skewers: Thread sausage pieces, peppers, zucchini, and onion onto skewers in a nice rotation. If using whole sausages, grill separately and slice after.

  3. Grill: Heat your grill to medium. Place skewers on the grill, brushing occasionally with the balsamic glaze. Turn every few minutes until the sausages are cooked through and veggies are charred (about 10–12 minutes).

  4. Finish: Brush with any remaining glaze just before serving. Garnish with a few rosemary leaves or shaved Parmesan if you're feeling fancy.


 Serve With:

  • Crusty Italian bread or focaccia

  • Grilled corn or a caprese-style salad

  • A chilled glass of Lambrusco or Italian rosé
